The Cut
No water. No filter. No apologies.
Most bourbon gets proofed down and chill-filtered until it behaves. This one keeps its edges. We bottle it straight off the barrel at around 115 proof, so the proof and the character shift batch to batch. That's not a flaw. That's the barrel talking.
The Make
Grain to glass in East Tennessee
Locally grown corn, mountain spring water, small-batch distillation right here in the hills. Nothing trucked in, nothing outsourced. Built slow and bottled bold, the way the Callahans have always done it.
The Pour
Full-bodied and unafraid
Brown sugar and charred oak on the nose. Molasses and cinnamon through the middle. Tobacco and leather riding a long, warming finish. It runs hot and earns it. Add a single rock if you want, or meet it where it stands.
